Blueberries

Blueberries seem fitting to 4th of July celebrations, so this is the perfect week to highlight all their delicious goodness. Today I’m going to bake Blueberry Pina Colada Bread.

But first, and pictured above, is my breakfast – vanilla soy yogurt with blueberries and cinnamon. I’m also tossing some blueberries into my morning smoothie: Almond milk, banana, blueberries and Amazing Meal Vanilla Chai powder. Starting the day with plenty of anti-oxidants. And for lunch I’ll toss some berries on top of my salad.

It’s a great time of year for blueberries. They’re sweet, juicy, and plentiful at the farmers market right now. Blueberries are so versatile. Use them in salads, smoothies, breads, cobblers, pancakes, and of course you can always just snack on them. Here are some recipes that won’t fail to please at your Independence Day gathering.

Blueberry Oat Bars from FatFree Vegan Kitchen are drippingly delicious. All that warm running blueberry juice – just looking at these as they come out of the oven makes your mouth water. Make them gluten-free by using gluten-free oats. I recommend organic whenever possible. Don’t wash the berries until you’re just ready to use them to avoid the development of mold. For a patriotic table, a simple tray of blueberries, strawberries, and vegan creme will add the red, white, and blue demanded for the occasion.
