Blueberries seem fitting to 4th of July celebrations, so this is the perfect week to highlight all their delicious goodness. Today I’m going to bake Blueberry Pina Colada Bread.

But first, and pictured above, is my breakfast – vanilla soy yogurt with blueberries and cinnamon. I’m also tossing some blueberries into my morning smoothie: Almond milk, banana, blueberries and Amazing Meal Vanilla Chai powder. Starting the day with plenty of anti-oxidants. And for lunch I’ll toss some berries on top of my salad.

It’s a great time of year for blueberries. They’re sweet, juicy, and plentiful at the farmers market right now. Blueberries are so versatile. Use them in salads, smoothies, breads, cobblers, pancakes, and of course you can always just snack on them. Here are some recipes that won’t fail to please at your Independence Day gathering.

Blueberry Oat Bars from FatFree Vegan Kitchen are drippingly delicious. All that warm running blueberry juice – just looking at these as they come out of the oven makes your mouth water. Many of the recipe blogs I point you to are award-winning sites. The one mentioned above and Eat, Live, Run among them. Eat, Live Run offers this Blueberry Almond Tart. An elegant addition to any spread. They’ll be licking the plates.

The Pina Colada bread is baked with coconut milk, pineapple juice and blueberries. It has an awesome fragrance and loaves are easy to transport.

 Vegan Mother Hubbard is a delightful blog. She shares thoughts about food, recipes and precious moments with her twin girls. Bring this blueberry and rhubarb pancake for a change from traditional cornbread.

Start your day with Moby’s Vegan Blueberry Pancakes from Epicurious featuring spelt flour, oat and wheat bran. After all, you can’t embark on a day of baking without first powering up. The tour is entertaining and demonstrates how a small and simple space can function beautifully.

I recommend organic whenever possible. Don’t wash the berries until you’re just ready to use them to avoid the development of mold. For a patriotic table, a simple tray of blueberries, strawberries, and vegan creme will add the red, white, and blue demanded for the occasion.
